Kay, From my experience 1/2 cup olive oil helps to create a perfect rich flavored red lentil soup. However you and any other Mideast foodie are more than welcomed to add their own cooking experience and preferences.

The soup was very tasty and easy to prepare and cooked very quickly. I reduced the olive oil to 2 Tbsp and the salt to 1/2 tsp. The flavor was still rich, spicy and savory.
