Oriental Carrot salad Recipe

Great appetizer. Why buy a commercial product when you can
prepare a  tastier, cheaper, healthier carrot salad by yourself?

Tools You Will Need:

  1 tbsp
  1 tsp
  1 large bowl
  1 wooden spoon
  1 pot
  Garlic press
  Peeler
  Lemon squeezer

Ingredients:

  7 peeled carrots  
  1 Tablespoon parsley, chopped
  4 cloves garlic, crushed
  1 Tbsp olive oil
  1 Tsp salt
  1 Tsp freshly squeezed lemon juice
  2 Tsp ground cumin
  ¼ Tsp turmeric spice

  1. Cook the carrots in boiling water until they get semi-soft.

  2. Slice the carrots into ¼ inch slices and mix them with all the other
      ingredients in a big bowl.

  3. Cover the bowl, refrigerate for 4 hours and the carrot salad is ready.

 Tip: Add 1 tsp of chopped fresh hot green pepper, if you  want it on 
         the hotter side    
 
 Best Served With: Hummus dip

I tried a few carrot salad recipes, but this one is special. Te cumin and garlic really make it so. I prefer cooking the carrots just a bit, so they remain firm

Another winner from this excellent web site. I reduced the hot green pepper to half the suggested amount and the salad was still zippy.
