Ingredients:
2 lbs fresh leafy spinach
1 C plain yogurt
2 tbsp juice from fresh lemon
1 tsp yellow onion, minced
salt and pepper to taste
3 tbsp mint, finely chopped as garnish

1. Wash spinach thoroughly, discarding stems and discolored leaves
2. Place spinach in large pot and cover with water.
3. Bring spinach to a boil on high heat and then simmer covered for 10 minutes.
4. Strain spinach and allow to sit until cooled to room temperature
5. Squeeze all excess water out of spinach and then chop finely.
6. In large bowl, add onion, lemon juice, spinach, salt, and pepper. Mix thoroughly.
7. Add yogurt and stir thoroughly.
8. Refrigerate until chilled, at least one hour.
9. Serve with chopped mint as garnish.
