Easy, simple, healthy and delicious. Hardly a day goes by that I don't prepare this colorful vegetable salad for myself and guests.

Tools You Will Need:
1 tbsp
1 tsp
1 large bowl
Garlic press
Lemon squeezer
Ingredients:
2 carrots  
3 cucumbers
2 tomatoes
1 medium onion
4 mint leaves
4 parsley sprigs
1 tsp freshly squeezed lemon juice
2 tsp olive oil
1 clove garlic, crushed
½ tsp sea-salt

Directions:
1. Dice the cucumbers, tomatoes, carrots and onion.

2. Stem and chop the parsley and chop the mint.

3. Put the chopped vegetables and other ingredients into a bowl. Mix,
wait 3 minutes. The vegetable salad is now ready. 
Best Served With: Tahini Paste and Pita Bread

This is a great vegetable salad, but unless you really love hot food you should use a small onion. I also found out that adding a tsp of seasoned tahini absolutely upgrades the salad.

I prepared this recipe for a hospitality management degree internship at a local hospital with a lot of middle eastern physicians and it was a great hit. the food service dept is still asking me for the recipes.

I took me only 10 minutes to prepare, didn't use carrots (don't like them), but it still came out good. I also added some black pepper, which really improved the salad.

The mint added a special zing to the salad. Delicious! The amount of salt in the recipe ingredients was just right.
