Ingredients:
1 pound spinach, cleaned and cut into big pieces
7 cups water
7 onions, chopped
½ cup extra virgin olive oil
1 tbsp freshly squeezed lemon juice
2 tsp sugar
1 tsp sea-salt

1. Boil the water and then cook the spinach for exactly 1 minute.
2. Take the spinach out of the water, let it cool, and then squeeze the
leaves with your hands in order to get rid of extra water.
3. Fry onions with olive oil in a pan until they get brownish.
4. Add the spinach and salt and cook for 5 more minutes while mixing.
5. Turn off the gas, add lemon juice, mix well and serve the spinach salad
in an appropriate bowl.
Tip: You can use Swiss chard as a substitute for spinach
