2 pounds pitted sour or morello cherries

1. Pit the cherries.
2. Layer cherries and sugar in bowl.
3. Cover and let sit overnight.
4. Put cherries and their now very sweet juice into a pan, slowly bringing mixture to a boil.
5. Stir frequently to prevent scorching for ½ hour or until cherries are soft.
6. Place cherries glass jars.
7. If syrup remaining in pan is too thin, simmer a bit more until it thickens enough to cover the back of a spoon.
8. Pour syrup into jars filled with cherries.
9. Close tightly and refrigerate.
10. Jam will last refrigerated for several weeks.
