Ingredients:
½ cup red or pink organically grown rose petals (do not use any with pesticides)
2½ cups sugar
2 cups water
4 tbsp lemon juice

1. Mince rose petals and place in glass bowl.
2. Add sugar and 2 tbsp. lemon juice to bowl and let stand 4-1/2 hours.
3. Boil water and then add rose petal mixture.
4. Add remaining 2 tbsp. lemon juice to boiling water.
5. Stir frequently for 30 minutes or until mixture thickens to syrupy
consistency. Watch carefully not to overcook.
6. Once thickened (when jam no longer runs off back of metal spoon), immediately remove from heat.
7. Place jam in glass bowl. When cooled, pour into clean glass jar. If preserving, follow standard preserving methods.
8. Refrigerate. Should be good for 4-5 days.
