Cheese balls are one of the most popular appetizers for a dinner party. If you're not crazy about Blue Cheese, use another semi-hard white cheese.

Ingredients:
8 ounces blue cheese, crumbled
16 ounces cream cheese
2 tbsp. sweet onions, finely diced
6 tbsp. pitted dates, finely chopped
1 tsp. lemon zest
½ tsp. black pepper, freshly ground
½ C dried minted, finely chopped
salt to taste
5 tbsp. nut of your choice, finely chopped (pine nuts, walnuts, pistachios, almonds, etc.)

Directions:
1. Using the electric mixer, mix and soften the blue and cream cheese.

2. Stir in lemon zest, salt, dates, pepper, and mint.

3. Place cheese on a large piece of plastic wrap and shape cheese into a ball.

4. Pull the plastic wrap around the ball and tighten.

5. Put in bowl, cover and refrigerate for at least 3 hours.

6. Prior to serving, roll ball in the ground nuts of your choice.

Best Served With: Pita Chips
