Ingredients:
2 1/2 pounds fresh mulberries
2 lbs brown sugar
3 tbsp freshly squeezed lemon juice
1 tbsp sea salt

Directions:
1. Soak the mulberries in the bowl with salt for one hour.

2. Filter and wash the mulberries thoroughly making sure all the salt is rinsed off.

3. Add mulberries and lemon juice to the pot, and cover them with water. Water level should be only enough to cover the mulberries.

4. Cook on medium heat for 30 minutes, occasionally shaking the pot. When the mulberries have absorbed all the liquid, the jam is ready.

5. Refrigerate three hours before serving.

Tip: After refrigerating, the liquids will accumulate at the bottom. These liquids can be used as a syrup. Just pour some syrup into a cup or container, adding as much water as you want to get desired sweetness.
