4 lbs. pork loin
1 yellow onion, finely chopped
1 large green pepper, diced
1 6 oz. can tomato paste
2-½ lbs. fresh green beans
1-28 oz. can diced tomatoes
2-3 tbsp olive oil

salt and pepper to taste

1. Boil water in pot.
2. Prepare pork by cutting it into 1/2 pieces.
3. Heat oil in pot and brown pork adding salt and pepper to taste.
4. Cover Dutch oven or skillet.
5. Simmer meat for approximately 25 minutes or until the meat is very tender.
6. When the pork is tender, add green pepper, beans, tomatoes, tomato paste, and enough water to almost cover all the ingredients.
7. Cover pot again and summer for approximately 30 minutes or when the green beans are tender.
8. Serve immediately or refrigerate until ready to serve after meat is no longer hot.
