Lebanese Chicken and Rice
This Lebanese dish is very filling and delicious. It’s an easy meal to make after work.

Tools You Will Need:
1 heavy skillet with lid
1 saucepan
1 cup

Ingredients:
2 cups cubed chicken
1 cup long grain rice
3 -15 oz. cans drained and rinsed butter beans
2½ cups chicken stock
1 onions, finely chopped
1 tsp salt, use split
3 tbsp virgin olive oil
1 tsp freshly ground pepper
1/8 tsp chili powder
1 cup fresh cilantro, chopped
¾ tsp coriander powder
4 pressed garlic
1 can diced tomatoes
3½ tbsp tomato puree
Juice from one fresh lemon

Directions:
1. Heat olive oil on medium heat.

2. Sauté onions until they are transparent.

3. Add garlic, salt, pepper, chili powder and coriander powder.

4. Add chicken and sauté for 2 minutes.

5. Add diced tomatoes, tomato puree, lemon juice and chicken stock and bring to a boil.

6. Cover and simmer for 40 minutes.

7. Add butter beans and continue to simmer until sauce becomes thick and chicken is no longer pink in the inside (15-20 minutes).

8. While chicken is simmering, boil water and then add rice.

9. On low heat cover rice and cook for 20 minutes. Fluff with fork when done.

10. Service chicken and beans on top of rice.

11. Garnish with chopped cilantro.
Best Served With: Pita Bread
