Kebabs are an easy, colorful entrée for a summer cookout. For added color, thread some green pepper, zucchini, and summer squash onto the skewers.

Tools You Will Need:
1 small bowl
1 large bowl with cover (you can use saran wrap)
Mixing spoon
1 large tray
Wooden skewers, soaked in water for a few hours (prevents burning of the skewers)
1 cup
1 tsp
1 tbsp
Ingredients:
¼ cup lemon juice
½ lemon, cut into 8 large pieces
1 tbsp honey
1 tbsp olive oil
2 tbsp dried mint
2 tbsp dried rosemary
1 red pepper coarsely cut
16 dried apricots,
12 oz lamb fillet, cubes into medium sized cubes

Directions:
1. Marinade preparation:

In a small bowl mix the lemon juice, the honey, and spices

2. Place the pepper, the apricots and the lamb in a large bowl and drizzle
the marinade, mix to coat thoroughly. Cover and refrigerate for 1-2
hours.

3. Pre-Heat the grill.

4. Thread the peppers, the apricots, and the lamb onto skewers. Include
      one piece of lemon in each skewer.

5. Finishing up:

 Grill for 10-15 minutes, or until meat is cooked through. 

Best Served With: Tahini Paste and Pita Bread
