Ingredients:
2 lbs. leg of lamb
5 medium onions, quartered
2 green (red or yellow) peppers, sliced to 1"
½ C virgin olive oil
½ tsp garlic powder
½ tsp onion powder
½ black pepper, freshly ground
7 fresh cloves garlic, minced
salt to taste

1. Slice lamb into cubes 1" to 1-½" thick.
2. Combine lamb, spices, olive oil, and garlic in bowl and refrigerate for four hours.
3. One hour before grilling, remove bowl from refrigerator.
4. Thread the skewers: meat first, then a pepper, and an onion until skewer is full. Be sure and save marinade.
5. Grill on high heat or under a broiler, basting every so often with marinade.
6. Cook to desired state -- medium rare, medium, or well-done.
