A traditional Sephardic egg preparation, these roasted eggs are served as daily fare or as part of the Passover Seder.

Tools You Will Need:
medium-sized saucepan
ovenproof casserole dish
1 tsp. measure
1 tbsp. measure
Ingredients:
6 white eggs
1 tbsp flour
1 tbsp ground or instant coffee (optional)
skins from 6 onions

Directions:
1. Fill saucepan with cold water.

2. Add eggs, coffee,  and onion skins and bring to a boil.

3. Lower to medium heat and cook for 30 minutes

4. Using just a little bit of water, mix with 1 tbsp flour and smear around the rim of the casserole dish.

5. Preheat oven to 120 degrees F.

6. Place eggs, onions and water they cooked in, into the casserole dish.

7. Cover tightly and and roast for 12 hours.
Best Served With: Cheese Bourekas
