Ingredients:
1 lb. lean ground beef
1 lb. cubed beef
4 tbsp. virgin olive oil
1 head fresh garlic, diced, divided
1 large onion, minced
1 tsp. ground cinnamon, divided
¼ tsp. cayenne pepper
¾ tsp. freshly ground pepper
salt to taste
1 can pre-cooked chickpeas
4 tbsp. tomato paste
1 large egg, beaten (or use egg substitute)
¼ C rice
8 sprigs flat leaf parsley, coarsely chopped
1 lb. cubed beef
4 tbsp. virgin olive oil

1 tsp. ground cinnamon, divided
¼ tsp. cayenne pepper
¾ tsp. freshly ground pepper
salt to taste
1 can pre-cooked chickpeas
4 tbsp. tomato paste
1 large egg, beaten (or use egg substitute)
¼ C rice
8 sprigs flat leaf parsley, coarsely chopped

1. Heat olive oil in saucepan and then saute onions until they begin to turn brown.
2. Add one-half of the garlic, cubed beef, salt pepper, one-half of the cinnamon, and cayenne.
3. Saute for 5-6 minutes, then add enough water to cover, and bring to a boil.
4. Cover mixture, lower heat, and simmer for 45 minutes.
5. In large mixing bowl, combine ground beef, remaining garlic and cinnamon, rice, parsley, egg, and salt to taste.
6. Form into meatballs and place into the saucepan.
7. Bring to a boil and then lower heat to a simmer for 15 minutes.
8. Finally, add chickpeas and tomato paste.
9. Serve when chickpeas are warmed.
