Ingredients:
2-½ lbs. whiting, cleaned with heads removed
¼ tsp. cumin
¼ tsp. turmeric
¼ tsp. hot paprika
¼ tsp. sweet paprika
¼ tsp.freshly ground pepper
salt to taste
1 C flour for dredging
2 lemons, sliced
olive oil for frying
paper towels for draining

Directions:

1. Mix all spices together in mixing bowl.
2. Wash fish thoroughly and pat dry with paper towels.
3. Sprinkle fish with spice mixture on both sides.
4. Lightly dredge each piece in flour, shaking off excess flour.
5. On medium flame heat 2 tbsp. olive oil in frying pan.
6. Cook fish several at a time. Don't crowd in skillet.
7. Depending upon the size of the fish, fry on both sides until golden brown or until fish flakes easily with a fork (5-10 minutes).
8. Drain on paper towels.
9. Serve with lemon slices.
