2 lbs. firm white fish
2 onions, sliced
4 cloves garlic, pressed
½ tsp. oregano
2 bay leaves
1 can chopped tomatoes
Juice of one freshly squeezed lemon
1-½ to 2 tbsp. olive oil
salt and pepper to taste
fresh parsley as garnish
black olives as garnish

1. Heat olive oil in skillet on a medium high heat.
2. When oil is hot, fry the fish until golden brown, and set aside.
3. Saute onions and garlic until golden.
4. Add oregano, bay leaves, chopped tomatoes, and lemon juice.
5. Simmer on low heat for 10 minutes, stirring frequently.
6. Place fish on greased ovenproof dish.
7. Pour tomato mixture over the fish.
8. Bake fish in oven at 350 degrees F for 20 minutes or until the fish flakes easily with a fork.
9. Garnish with olives and parsley and serve.
