Tools You Will Need:
Large pot
Cup measure
½ tsp. measure
Tbsp. measure
Garlic press

Ingredients:
1 lb. skinned chicken breasts cut in 2" long strips
1-½ C prepared chicken broth (low salt)
1 C couscous (plain or whole wheat)
2-½ tbsp. virgin olive oil
1 large onion, coarsely chopped
3 cloves fresh garlic, minced
½ tsp. cayenne pepper
½ tsp. ground cinnamon
3 tsps. ground cumin
1 zucchini squash, 3" strips
4 small carrots, sliced thin
2 celery stalks, chopped
1 can diced tomatoes
2-¼ C cauliflower, chopped
½ yellow bell pepper, chopped
½ red bell pepper, chopped
1 turnip, chopped
1 C water
4 tbsp. fresh flat leaf parsley, coarsely chopped for garnish

Directions:
1. Heat olive oil in large pot and then saute onion and minced garlic until onion is translucent.

2. Add seasonings, tomatoes, carrots, celery, cauliflower turnip, peppers, and broth and mix well.

3. Bring mixture to a boil and then simmer for 15-20 minutes.

4. Add chicken and zucchini squash and simmer for 15-20 minutes, or until chicken is no longer pink in the middle.

5. While mixture is simmering, prepare couscous.

6. When chicken is fully cooked, add couscous to pot, stir, and serve.
