Baked Fish Tahini
This red snapper recipe with tahini is one of the most popular fish dishes in the Middle East. You can substitute halibut or sea bass if you prefer.

heavy skillet
cup measure
tsp. measure
tbsp. measure
garlic press
Ingredients:
8 lbs. fresh red snapper
1 C tahini sauce
10 onions, chopped
2 C freshly squeeze lemon juice
4 garlic cloves, pressed
½ tsp. black pepper
½ tsp. cardamom, ground
1 tbsp coriander, ground
2 tbsp cumin, ground
2-3 tbsp. olive oil
PAM spray
½ cup water

Directions:
1. In skillet, heat olive oil on medium heat.

2. Add onions until translucent.

3. Heat oven to 375 degrees F.

4. Grease dish with Pam spray and place fish in dish.

5. Sprinkle all seasonings on the top and underside of the fish.

6. Add cooked onions and bake in over for 30 minutes.

7. After the 30 minutes has passed, open oven and pour tahini over  the fish and bake for 30 more minutes.

8. Serve hot.
