
A very refreshing drink from the Tunisian kitchen, also known as
"rosseta", is great for hot summer days. The recipe is an almond
syrup which can conveniently be used whenever you want.

Ingredients: 1 cup

8 cups water
3 cups almonds, finely ground
3 cups sugar
½ tsp rosewater

Making the Syrup:
1. Boil up the water and sugar in the pot until it becomes a syrup
2. Add the ground almonds and boil again, then cook for 5 more minutes
and remove from fire.
3. Let the mixture sit for 2½ hours
4. Put the mixture in the cheesecloth and squeeze the fluids into the big
bowl.
5. Filter the mixture with the colander into the big bowl, and try to
squeeze and filter the remaining mixture as much as you can.
6. Move the mixture into the jar Refrigerate for 3 hours and the you are
ready to prepare your almond drink.
Making the Almond Drink:
1. Add about 1 Tbsp of the syrup to a cup and fill it with water. If you
want to serve in a jug, use 4 cups water for 1 cup syrup.
Best Served With: Stuffed Dates
