Garlic Paste Toum Recipe from Lebanon
The key to making perfect Toum is adding the oil and the lemon
gradually so the paste is emulsified. Serve this paste with crackers
or bite sized pita wedges. Top with chopped lettuce and tomato
if desired.

½ cup lemon juice
1 cup peeled garlic cloves, whole
1 tsp salt

1. In a food processor, puree the garlic and salt.
2. With the food processor turned on, gradually add ½ cup oil. This is
extremely impotent- the paste will separate if you add he oil too
quickly.
3. Slowly add 2 tsp lemon juice.
4. Continue adding ½ cup oil followed by 2 tsp lemon juice until all the
ingredients are added.
Do not exceed these amounts, or the paste will separate. Serve at room
temperature or chilled.
Best Served with: Pita Bread
