Baking tray

2¼ pounds white flour
2 cups sugar
1 cup olive oil
2 ounces fresh yeast
1½ cup raisins
2 eggs, beaten
¾ cup warm water
2¼ cups tap water

1. In a big bowl, mix the yeast with
¾ cup warm water. Add 1 Tbsp flour

and 2 Tbsp sugar.
2. Mix and cover the bowl. Put in a semi-warm spot for rising.
3. Put the olive oil, eggs, sugar, raisins, the yeast mixture and 1½ cups tap
water in a different bowl.
4. Add flour, mix and knead well until you get slightly sticky dough. Add
some water if needed.
5. Cover the bowl with a damp towel and let it rise for1 hour.
6. Knead the dough for 3-4 minutes.
7. Roll the dough on a floured surface into a 1 inch thick layer.
8. Use a cup to cut circles balls out of the dough layer then put them
in a dish, cover with a towel for 30 minutes, so they rise again.
9. Grease a baking tray with olive oil and put the balls on it.
10. Slide the tray into the oven preheated to 400° F
11. When the rolls are golden brown (after 20 minutes) they are ready.
Tip: Spread egg yolk and sesame seeds over the rolls
